Chocolate Silk Pie - this was demoed at a healthy eating event at the University Health Network. Who would think tofu in chocolate pie could be so yummy!
2 c chocolate wafer or graham cracker crumbs
1/4 veg oil
OR
3 T water
1 1/2 T butter or margarine, melted
12oz package semi sweet chocolate chips
1 12 oz packages firm tofu (I think the chef said it is usually sold in 8 or 10 oz packs and he just used that)
1 t vanilla
1/2 c sugar
CRUST
Combine crumbs and liquid, mix well. Press into sides and bottom of a 8" pie pan
PIE
In a double boiler melt the chocolate. In a food processor combine tofu, vanilla and sugar. Process until completely smooth. Scrape down the sides, add chocolate to blended tofu. Process until well combined and no white streaks remain. Pour into pan, chill for at least one hour before cutting.
